Apple Yum Yum Cake Recipe – This is the 1st-place winning dessert recipe for the 2013 Art and Apples Festival in Downtown Rochester MI. This Apple Yum Yum Cake Recipe submitted by Michael Onweller of Lapeer, Michigan.

Apple Yum Yum Cake Recipe Topping Ingredients

  • 2 medium apples
  • 4 tablespoons butter
  • 1 3/4 cup light brown sugar packed firm
  • 2 tablespoons boiled cider
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup light corn syrup

Apple Yum Yum Cake Recipe Ingredients

  • 3/4 cup vegetable oil
  • 1 cup brown sugar packed
  • 2 tablespoons boiled cider
  • 2 large eggs
  • 1 1/2 tsp. cinnamon
  • 1/4 tsp. ginger
  • 1/8 tsp. ground cloves
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 1/2 all purpose flour
  • 3/4 cup pecans

Apple Yum Yum Cake Recipe Directions:
Preheat oven to 350 degrees. 9″ pan round, grease, and parchment paper. Slice top off apple and save. 1/4 slices other two apples, place in pan. Prepare the topping, pour 1/4 of topping over apples. Boil topping till sugar is dissolved.

Next, make cake. Set aside apples and topping in pan. Save rest of topping.

Mix cake ingredients together. Oil, brown sugar, boiled cider, eggs, spices, salt on medium speed with a mixer for 2 minutes.

Mix flour, baking soda, stir into batter. Added chopped nut or what you want. Drop batter in over apples and topping gently spreading over apples. Bake 50-55 minutes till done. Test with a toothpick. Let cool for 5 minutes or so, then flip over bottom up. Scrape what’s left and put over cake and rest of topping.
