Easy Shepherd’s Pie Recipe
I have never made an attempt at Shepherd’s Pie because in all honesty, it wasn’t a common dish I heard much about. Now, I realize it’s an easy fix for a ground beef dish that adds some variety to the same old burgers and tacos options. Here’s a version of Shepherd’s Pie that worked well with my family.
Shepherd’s Pie Ingredients
- 1 lb. ground beef
- 1 c. chopped green onion
- 1 c. chopped green peppers
- 1 can stewed tomatoes chopped
- 2 mushrooms finely diced
- 1 can cream of mushroom soup (I used an organic cream of mushroom soup in a carton,
- available at Trader Joe’s or Meijer).
- 4 cups mashed potatoes
- 3 cups shredded cheddar/monterey jack mix
Shepherd’s Pie Directions / How to Make Shepherd’s Pie
Pre-heat oven to 350 degrees. Brown ground beef while sauteing with onion, peppers, mushrooms, and tomatoes. Drain. Spray a 2 quart glass casserole dish with a non-stick spray. Pour ground beef mixture into dish. Add cream of mushroom soup and mix with ground beef mixture. Spread mashed potatoes in an even layer on top. Bake at 350 degrees for 15 minutes. Top with shredded cheese and bake for another 5 minutes.
The best part of this Shepherd’s Pie recipe is the flexibility. If you’re not a fan of green peppers, replace it with corn. Use a different cheese. Add garlic to the mashed potatoes. Make this one your own and your family will love it.
