Chef Marcela Valladolid Interview

Lisa LaGrou Oakland County Moms – What makes having a brunch an attractive option vs. a breakfast or lunch?

Food Network Chef Marcela Valladolid – It’s kind of that place in the middle where you’re still allowed to serve those breakfast dishes, but you’re also allowed to serve those more savory dishes. It’s kind of like meeting in the middle. But, it also gives you a chance to wake up a little bit later and extend the festivities a little bit more into the afternoon, especially if you’re going to have a wonderful drink like the one I’m going to talk to you about today.

Lisa LaGrou Oakland County Moms – What is your favorite brunch dish?

Food Network Chef Marcela Valladolid – Well I have a few. Do you mind if I talk you through them because they’re really amazing? It’s like having three kids and having to pick one. You can’t do it.

Lisa LaGrou Oakland County Moms – Please do. see video for Marcela’s Chilaquiles, egg dish, and awesome dessert fritters. Find recipes at facebook.com/kahlua.

Lisa LaGrou Oakland County Moms – Is that the cocktail you were talking about?

Food Network Chef Marcela Valladolid – Yes, the Kahlua peppermint mocha hot chocolate. It’s got marshmallows floating on top. It’s really delicious, perfect for the holidays, and a nice accompaniment for the fritters.

Lisa LaGrou Oakland County Moms – What small touches can I add to make my brunch a memorable event?

Food Network Chef Marcela Valladolid – The most special part for me is that I am able to tie some sort of family story to each of these dishes. You can ask your guests to bring their favorite dish that their mom used to cook for them. It’s always such a great conversation piece. Imagine starting the conversation by saying “This is a recipe handed down by my great grandmother, and landed all the way in my hands, and now I’m sharing it with you today.” It’s all about keeping the tradition and the culture alive.

Lisa LaGrou Oakland County Moms – What other suggestions do you have when planning a potluck brunch with a group of people, and making it a success?

Food Network Chef Marcela Valladolid – To make it a successs it’s really important to keep that menu balance. Obviously there’s got to be a lot of communication between you and your guests. You obviously want to take some of the load off if you want your guests to help … it’s a potluck. But you want to make sure it’s balanced. …. You want to make sure you’re communicating with your guests to make sure you’re not competing –  you don’t want have to four egg- based dishes and just one tiny sweet. You want to be sure you have everything in that menu.
