DIY Roasted Pumpkin Seeds Recipe

Don’t throw out the pumpkin seeds when making Halloween Jack-O-Lanterns, pumpkin seeds make great snacks that are rich in fiber as well as vitamins B and E. Kids especially love them. Purists will want only salt as a seasoning, but if you’re feeling adventurous, experiment and have fun with seasoning blends.  Last year I tried the garlic powder and salt and it was really good. I also went with the olive oil over the butter, and tried to keep up the healthy attributes.

Roasted Pumpkin Seeds Recipe Ingredients

  • 1 1/2 cups pumpkin seeds
  • 2 teaspoons melted butter or melted oil (olive oil or vegetable oil work well)
  • salt
  • garlic powder (optional)
  • cayenne pepper (optional)
  • seasoning salt (optional)
  • cajun seasoning (optional)

Roasted Pumpkin Seeds Recipe Directions

Preheat oven to 300° F.

Arrange all the pumpkin seeds on cookie tray and remove excess ammounts of pulp and strings. Feel free to leave “some” pulp as it adds flavor in the baking process.PumpkinSeedPRE

Spread cleaned seeds evenly across the cookie sheet in a single layer.PumpkinSeedSPREAD

Spritz the seeds with non-stick olive oil spray (or butter substitute spray like PAM)PumpkinSeedOIL

Sprinkle desired seasonings (I used garlic powder, table salt and onion powder.PumpkinSeedSALT

Bake for about 45 minutes, stirring occasionally, until golden brown. Voila! Freshly roasted and toasty pumpkin seeds!
